So for my first entry of the new year I want to talk about my experience with the wonderous bacon explosion, found here. When I first looked at this, thanks to one of my former coworkers, all I thought was “omfg arterial destruction!” but then today six months later I was in the mood for one.
Unfortunately I happen to be on of those few people blessed with a pork allergy so I had to shake things up a little. On top of that I am also one of those people who do not like BBQ sauce so I had to change it up a bit more! And since I learned to cook from my Jamaican mother I just HAVE to add Walkerswood Jerk Seasoning to EVERYTHING I cook PERIOD. So my version of this explosion of bacon is a little odd. Also I am not big on measurements (blame my mother). But anyways! lets get down to it shall we?
As mentioned earlier I am allergic to pork so I used turkey products for this Bacon Explosion so here is my first step the TURKEY bacon weave!
Next I created my own brand of Jamaicanified Sausage meat. in order to do this I used:
3/4ths pound of ground turkey
1/2 tablespoon of Walkerswood Jerk Seasoning
Some Powdered Garlic
Some Ground Black Pepper
Some Paprika
Some Basil
half a teaspoon of salt (I am not big on salt and half a teaspoon was a bit much)
VERY little Cumin
then I stirred it up and there you have it
Next fried some turkey bacon. In hindsight I should have fried more AND I should not have cut up the turkey bacon before I sliced it. Oh well live and learn
After the frying came time for my wonderful BBQ rub substitute. here it is
1/2 teaspoon Walkerswood Jerk Seasoning
Some Garlic Powder
Some sweet red wine (I used Imperial Red from San Antonio Winery)
Some Paprika
Some Basil
Some Ground Black Pepper
And about 1 tablespoon of Soy Sauce
I then spread this stuff out over my bacon weave mmm mmm good!
Next I spread out my home made turkey Sausage meat over the turkey Bacon Weave
Then put my fried bacon over it. Hmm, I REALLY should have fried more.
Then Rolled it up!
Then rolled up the turkey bacon weave!
And wrapped it in Aluminum Foil. I wrapped it in Aluminum foil out of habit. I don’t think it is necessary or even advised but I did it.
Next I Shoved it in the oven at 225 degrees. After about 1.5 hours I took it out of the aluminum foil and let it brown for a while (30 minutes or so).
Since I could not figure out what to put on the outside here is the finished product!

I really liked it haha but try it at your own risk! I will not be responsible for anyone getting high blood pressure or anything like that!
